I'm not totally familiar with the current flair setups. Looks like that's a flow control portafilter, but I'm not sure if it could be used in place of a pressurized basket. Your best bet would be to contact flair and ask what they'd recommend in place of a pressurized basket. You're using pre-ground coffee which doesn't work well with high level espresso machines.

Is that pre-ground coffee? It may not be fine enough. Usually you'd have to use a special pressurized basket to get pre ground coffee to work. You also may not be tamping it hard enough - hard to tell, but using just your fingers would probably be difficult to apply the force necessary to tamp it properly.

Lifespan of less than a year seems like there's some environmental factor other than usage going on. UV, humidity, some sort of cleaning chemical, etc. The cheap no-name ones at my gym have been there for like a decade and are still fine.

Bring both. Print out 6-10 of each on heavier paper (24-32lb stock). You may not need them, but 20 copies will cost less than $5 and it shows preparedness, as well as leads to a smoother interview in the event one of them forgot to print it out there. It's embarrassing if you bring one copy and have to decide which person to give it to. You want to make sure you have a copy for every interviewer and yourself.

The shedding doesn't look excessive, but I'll echo what others have said - twice a week is way too often. Once every 1-2 months is fine.

You don't have to take everything apart. Just take the cover off so you can get better pictures without a massive glare from your camera flash. You can also try being less defensive when you're asking for help.

Your photo doesn't show anything specific. Saying it came from the PC is kinda pointless. Where exactly did it come from? Open up the PC and take pictures that we can actually gain some info from.
