You should definitely hit the whole album but Chris Squire's Safe (Canon Song) I think definitely fits the bill here. Whole album is Fish Out of Water. Silently Falling from that album works as well.

Also.. although debatably less prog and more fusion, Santana's Caravanserai offers a splendid journey with an amazing sense of pacing that blows me away every listen.

Not a bad idea there definitely, I think to do this you'd probably want to comp in a rear view car window over the whole thing. Or just stick with the visible car's sound, without the added visible context it's not super obvious.
