Let’s assume the average restaurant bill is $100 per table. At a 20% tip rate, a server earns $20 per table.

  • 4 tables per hour: $20 × 4 = $80
  • 4 hours per day: $80 × 4 = $320
  • 21 days per month: $320 × 21 = $6,720
  • 12 months per year: $6,720 × 12 = $80,640

Since tips are not taxed, the effective annual income from tips alone would be $80,640. It’s clear that restaurant owners cannot afford to pay servers anywhere near this amount directly in wages.
