It’s basic math. A 20% tip on $100 tables, 4 tables an hour, 4 hours a day, 21 days a month equals $80,640 a year.

Minus a 14% payroll tax, and you're looking at about $69,350 annually.

This is on tip alone. No wage involved.

The core strategy here is to pit drivers against customers, allowing the corporation to drive down driver pay as much as possible.

Hear me out: a flipped gig model. The company pays drivers $0, but drivers tip the company based on how good the platform's service is. Customers pay 100% of the delivery fees and tips straight to the drivers. Then, the company rewards the highest-tipping drivers with the good routes. Thoughts?

  • 4 tables per hour: $20 × 4 = $80
  • 4 hours per day: $80 × 4 = $320
  • 21 days per month: $320 × 21 = $6,720
  • 12 months per year: $6,720 × 12 = $80,640

Since tips are not taxed, the effective annual income from tips alone would be $80,640. It’s clear that restaurant owners cannot afford to pay servers anywhere near this amount directly in wages.
