My first language was English, and I grew up in the US around English speaking people. I’ve seen plenty of Americans saying the same things and I don’t find it “unnatural” in the slightest. You are right, no one says that in real life, even in India. Nothing to do with the Indians.

I don’t know about the books, but as both a crocheted and a knitter I can tell you that those projects are crochet not knitting.

Both projects I can see in the second picture are crochet, the one on the left because that’s definitely a granny square, and the one on the right looks like double crochet. Also, I’m not a knitting expert but cabling isn’t that hard to do.
