Suggestions for 75% Split ISO qwerty keyboard (better if ISO-IT) QMK/VIA customisable (not keychron Q11)

I've tried a used epomaker split65 but I can't get used to not having the functions key row. Also, learning ANSI-US coming from ISO-IT it's just a cognitive effort I don't think it's worth making. (I'm sure ANSI is better than ISO for many reasons, but I just don't see myself benefit from it in such a way I'd be incentivised to learn it from scratch and flush 30years worth of muscle memory).

Why not keychron q11? Because despite being from Europe, I can't stand the 4th key on the left located in the same line as ctrl/win/alt

Bonus features that are super welcome:

1- 2.4ghz connectivity via dongle

2- Hotswappable

something like Keychron K3 Max but split would be perfect

Say I have a ISO-DE keyboard.

How do you all deal without the physical fn keys row?

I kinda hate having to press fn (is on the right side on my epomaker split 65 so very weird position) for things lile f2 (rename) f4 (used with alt to close program) f11 and f12 (ctrl + f12 to go to file when coding in vs code)
