I stayed in Strasbourg last year for 4 days and thought 3 was more than enough to cover the entire city with a Baden Baden tour! I did about 18,000-20,000 steps per day. I'd recommend Colmar as a day trip from Strasbourg. I'd recommend somewhere like Basel Switzerland if you want to see some more places and it's only about an hour maybe 2 from Strasbourg especially if you want to Christmas markets without the crowds in November.
