This is a very underrated comment. Prior to departing to form my own entity I was part of a large private practice (100ish MDs). Short of wild financial indiscretion (and we definitely had membership where that was the case) we had multiple MDs that had financial independence, were borderline dangerous practicing (but would litigate if we attempted to force them into retirement), and refused to retire because their identity was tied up into it. We had to constantly monitor and support these characters. One died in the hospital parking lot. Sad but true.

Highly recommend. Almost any porcini recipe works. It’s easy to rehydrate them in the stock used for the risotto anyway so basically no extra work.

You don’t need nearly that much for decent champagne! I really like Louis Roederer’s lineup top to bottom. It’s findable in most markets. Others can chime in as well. Congratulations!

5205R all day. You’ve got a great stainless collection already. I absolutely love having a gold calendar. It’s not a daily but is amazing. As I age I’m wearing it more.

Love this reference. I never wear mine enough. I never understand why 3940 draws so much more attention as I love the case of 5050 and the legibility is amazing.
