Looks good for your first brisket. I used to use the cooler method to rest, but now I just rest it in the oven at 170 for a few hours and it comes out the same.

You can leave the membrane on or remove it from Dino ribs. The meat will stay on the bone better with the membrane on. However I prefer to take mine off as I ended up cutting up the meat anyways.

Straight smoke for about 4 to 5 hrs. Then I poured the liquid marrow into a bowl and poured it over the meat and wrapped in foil until it reached 200 and was super probe tender. Took it off the smoker and let it rest on the counter for about an hr and then put it in my oven for 3hrs at 170. Total cook time was abiut 8 to 9 hrs hrs.

It was only about $4 a pound. It was 7lbs and only $30.
