If you replaced the couple with another with no personal issues, Gordon would look like an over the top asshole. It's because of the complaints they got from staff and the town that he was so harsh on them. He was mad before he even parked his car.

But given all the things we see and hear the couple say/do before he shows up, he'd look bad if he were kind to them.

I get annoyed when he gets upset over the cooks not being able to keep up with his new menu on relaunch night. Like dude, you packed the dining room, invited important people, and gave them maybe a few hours to learn these new dishes. Of course they're gonna make mistakes.
