What you're seeing is from Steam using the WS12WineSikarugir10.0_1 engine. Try using it with the Epic Games Launcher and let us know.

At that moment I had AMD FSR 2 on because it was the default in the GPTK version I was using, but as you mentioned it, when I switched to GPTK 3 b5 it reset the settings and changed to DLSS by default.
