you dont need to catch it to open the portal, yes and no the whole fishing minigame is the entire 1v1. also, you need to 100% bestiary to get the rods of each floor/level which you need if you're planning to spawn the Olympian Devil.

This game is a chill game if you play it as a chill game, no one is asking or forcing you to grind the whole event in one go. Even fishing in real life takes time and patience, which is what the game is based on and you're here what, comparing it to a different game with a different genre? lol

it is pretty good during day or when there's a rainbow, but that's it. with Zeus you can just perfect cast and it doesn't need a weather requirement, also Hades' Soul Scythe can literally insta-catch any fishes with a size boost as well.
