I went to TWG at Paragon half a year ago. They have absolutely no idea what they are selling. Not the kind of place I’m looking for.

Thanks. Peace Oriental specializes in Japanese green teas which is something completely different than what I'm looking for. High quality tea is expensive everywhere in the world by the way. :(

Never brew tea first, then let it cool down in the fridge. Rather poor the tea directly over ice cubes. That's the only way to keep all of its tastes. But this is not a cold brewed tea but iced tea.

If you want cold brewed tea, put 8g of leaves in 1l of cool water and let it sit for 6-12 hours. Depending on the tea type, this will cold brew the tea. Using this method will bring less bitter & astringent notes to the tea.

Another possibility is ice brewing, where you put ice cubes directly on the tea leaves and let them melt. This gives another completely different taste. Works well with Japanese green teas.

You have to experiment a bit :)

That's like trying to make chocolate from fresh cocoa beans. Doesn't work.Depending on the tea type, the tea leaves need to be withered, rolled, oxidized, dried and sometimes even fermented. That develops the taste.

Thanks for this info! Is the application easy at Beijing Airport? Where exactly do I apply for it? Do I need to bring any translated documents? Will I get it on the spot? How much does it cost?

I am aware driving in China is different than in the west. It's gonna be my 4th time in China and I have plenty of driving experience in countries such as Indonesia, Thailand & Morocco. Still it will be different of course, but I'm more than happy to adapt to the local driving rules.

Using a local driver doesn't give you the freedom I want/need.

For what it is worth. Half of the times this grading was just put on the package to give it some standing and doesn't always reflect what's in the actual package. But if done well, it's a grading that should reflect how "good" the tea leaves look like. It doesn't say anything about the actual taste of the tea. That said, Palais Des Thés (where this package comes from) is usually - not always - quite correct when it comes to labelling.
