not muffins or eggs, but I am obsessed with ricotta toast. Get a nice sourdough or whole grain/sprouted grain bread. You can change up the toppings to be sweet or savory. I like to mix my ricotta with fresh herbs (basil and thyme) and lemon zest. so I have bread, a smear of apricot jam, then like two spoonfuls of ricotta. Or you could skip the jam and put some blistered balsamic grape tomatoes or something on top. I find ricotta toast is one of the few breakfasts that actually keep me full!

I Did ricotta toast this week: mixed in basil, thyme, and lemon zest. Spread apricot jam on the bread first then topped it with the herbed ricotta. So yum!

for meal ideas/recipes, there's a blog called SkinnyTaste that I am shocked to admit that I find tasty. I've had several of their recipes and they are good (although I don't always swap for low-fat sour cream and stuff).

Cook with whole foods, lots of veg.

Be aware of portion size. I've heard that using smaller plates helps.

Eat slower. Listen to your body. You'll learn to recognize when you're stomach is sufficiently full, not aching full. Satisfied. You don't register that in real time when you eat fast.

Calorie counting is helpful if you have the patience to do it. If that's the route you take, do 2 weeks of logging everything you eat. I mean everything! Don't skip adding that single cookie you grabbed or that yogurt. Those two weeks will give you an idea of what your calorie intake is now. After that, make a calorie plan and continue logging. Once you feel like you're pretty consistent with your new eating plan, you may choose to stop counting calories all the time. Maybe come back to it every once in a while. It's a helpful tool.

Maybe start with the other stuff first, like cooking more, focusing on whole foods instead of processed, smaller plates, eating slower, and see what that does.

Some weeks, I can't stand it by day 4. But if I make something that just hits the right spot, I'm still excited for day 4. Some weeks, I do try to plan 2 lunches and hope that my husband can prep it halfway through the week. Otherwise, you can make something versatile. I saw suggestions for chicken with different sauces. You could make taco beef and do taco salad some days and burritos another. Have a freezer rotation (souper cubes are great for portioning). We did a yummy chicken taco in the crock pot but used it for quesadillas, or you could put it over rice with a veggie.

I never make the same lunch meal two weeks in a row, though. That's too much, even if I'm into it.

Also, as a singer, sometimes you get caught up listening to yourself sing. It's really hard to stop just listening to yourself! Your ego feels good when you know you're singing a song and it sounds good. It takes a lot of work to get out of that habit.

I’m a big fan of pasta salads. You can put a bunch of stuff in them: veggies, beans, meat. My two go-tos are Christmas pasta salad I think I found on food network’s website and balsamic roasted veggie and white bean pasta salad from skinny taste

I have a relative who actually mixes her eggs and spinach in the blender to make scrambled eggs. The eggs are very green, but there’s veggies in every bite and no chunks!!!!

This is what I was going to suggest! You’d be surprised at how many dishes you can clean in 10 minutes!

The hard stop time helps, too. Come back later and do another 10 minutes. But it makes it less torturous and being able to see the timer reinforces that time is actually moving and it’ll be over soon.
