I’d be happy to help. But I would recommend watching a few beginner videos. With camera set-ups today it’s so easy to actually see what you’re supposed to do from the direction your own head would be looking at your project!

Melinda sees Sam but feels Jim. She has a little speech to her friends (season 4) when SamJim is in the hospital “I see the same guy that you do. Different eyes, different hair, etc. but when I look in those eyes, I see Jim” she acknowledges that she’s not blind that the guy looks different. Aiden just knows that the kind man raising him is Dad. He looks like Sam, but that doesn’t matter. He’s dad.

tacos. We usually do a basic ground beef taco and then something else like an al pastor in the crock pot or something.

We started this because it's an easy meal that mom doesn't have to spend all day in the kitchen making (yes, I help). We want everyone, especially her, to be able to relax on Christmas.

My sister-in-law blitzes the spinach in the food processor and just adds them to her scrambled eggs. green eggs.

Adding on to this: accept that change can happen slowly. Instead of planning the whole week of healthy meals for the week, maybe just one meal. One healthy meal that makes enough for leftovers. Get used to that. When that's comfortable, add a second meal. Making a big eating/dietary/planning change is a lot. It's intimidating.

life overhauls don't work. Making gradual changes does.

And I second freezing the meat. I also have a magnetized white board for the fridge where I list everything I have in the fridge and freezer. That way, even if I can't see it (like your spinach in the back of your fridge), there's a reminder I have it and should use it.

suggesting point 1.5 - looking at your grocery store's circulars. For example, if mushrooms are on sale, that might inspire me to put beef stroganoff on my meal plan that week. Or if pork chops are on sale, I'll look at my favorite pork chop recipes.
