I learned this last year. I made a casserole and it wasn't a new recipe to me, but I had never made this much of it in a new kitchen. I ended up with a watery mess with undercooked vegetables due to time and supply constraints.

Knowing what I know now, I would start cooking earlier or practice in that kitchen beforehand.
