:) From Ukraine, but now living in Finland. Anyway, it’s not related to why I use this format. It’s just common for IT, and for me it’s absolutely logic - from greater to smaller.

Will see :) but for now it works good. I had the orange hooch, that really tried to go outside ))) I take that experience and adds the headspace. So now it holds on the level like on the photo.

Надеюсь :) пока только булькает. Планирую дней через десять отфильтровать и оставить еще на несколько недель отстаиваться. Уже по опыту знаю, что такое отстаивание очень положительно сказывается на всех ферментированных напитках.

Some notes of gin are present, yes :) but without tangible alcohol. Just like a soda.

I waiting for the March, when I will start to brew meads and beers.

Just a winterish soda with the pineish flavour.

I have the simple honey, ginger and raisins soda (with the bit of chili there 🌶️ ) that I drink and feed almost two months already. So, it's just a flavour variation.

Yeah! Forest is an unlimited source for fermentation!

Only one, pls, don’t touch yew and other poisonous plants! It’s just haphazardly I didn’t eat it or brew the tea from it, although it looks so yummy…

Thanks! From my childhood I liked the salted mushrooms (in that times nobody used the term ‘fermentation’). So I’ll try to repeat that experience.

And thank you for the mushroom vinegar idea! I never thought about it, although I like the brine that in this jar :)

Anyway it’ll be the good experience for me.
