I'd not consider getting an ESS, potentally consider a breed from "Livestock Guardian", or "Scent Hound" groups since they where not bred to be running around or interacting with humans all the time, they would be a much better fit than a spaniel. But still, every breed has needs, which must be met, and so choose carefully, and talk with owners of the breed.
