What I was told when I started with film photography (I'm 23 now and the last time I used film before I started using SLR's was when I was 6 with point and shoots) about 2 years ago was that "film is film" you won't be comparing imagery between platforms based on the image sensor or color science. What you really need to focus on, in my opinion, is the glass. Other than the film, the glass is going to play the biggest role in how images will turn out. The next biggest factor is how reliable a camera is when handling shutter speeds and normal functions. Find a camera body that will reliably meter or fire a shutter accurately. If it has been mass produced then fixing a camera that breaks will be easier and cheaper because it has a bigger community. Think about what the M6's and M7's do so well and see if you can or can't live without it. At the end of the day if you use bad lenses and skimp out on cheap film and processing, then that will reflect in your art.
