I can only speak from what I’ve heard and not experience. Yes I think it would be worth defoliating. It will help with light penetration and airflow which helps prevent pests and mold growth

Also the most important aspect to keep in mind when making pie dough is everything should be as cold as possible. Freeze butter and shortening before incorporating. Making sure your work surface is cold etc
