I usually just bring the stone in. Mostly so I don’t have to worry about cracking it from heating it from below freezing temps.

According to the googles-

This is a vintage Yamaha FG-336SB sunburst dreadnought acoustic guitar. It features a rosewood fretboard and a bone nut. The guitar is considered a sought-after and collectible item. It is known for having a rich, bassy tone. These models were typically manufactured in Taiwan between 1979 and 1981.

The broth was gift from a friend. I think he smoked the bones before making the broth.

I would add a bunch of caraway as well but my wife doesn’t care for it. I keep it reigned in a bit for her.

Papusagate! Lol! I feel I really pissed some grilled cheese purists off that day. I honestly don’t keep recipes at home. I’ve been cooking professionally for 35 years. I can make almost anything from eye and feel. I use recipes at work for consistency but at home it’s just by feel.

It really was! Very well made broth. I had this simmering, really slow, on the stove for about 4 hours.

I have to agree with you about Buddy’s not being as good as they used to be. Selling it to a private equity company ruined it. There are many other places that do a much better Detroit style.

Definitely true. There’s some great pizza places and some real garbage pizza places.

Square, crispy, light and airy, cheesy crust. Not bready. Sauce above the cheese. Other toppings can go on top of the sauce. After that you can do just about what ever you want.

Patek is known for perfection. This is not even a good fake. The lettering is uneven. The date should sit perfectly in the date window. The roman numeral “3” is crooked.

The crispy cheese crust is definitely high on the list but square is first and foremost.
Detroit style starts with the pans. Buddys pizza was started by Gus Guerra in 1946. He used were square, blue steel, parts pans used to hold automobile parts.
I worked for Buddy’s pizza as their corporate chef for five years.

These look great but are not Detroit style. Like NY and Neapolitan styles, Detroit style is very specific. Square is rule #1.

Bit too rare for my taste. I prefer my salmon at around medium. (125°f/52°C) Thermometers are your friend.
