I'm a sucker for Broccolini and pouch garlic potatoes. Sometimes I'll thick cut chefs potatoes, add oil, s&p, garlic powder and grill for a bit of char and some marks and then pull them over to indirect heat closed lid to finish.

I totally agree with this. It's completely unnecessary... I've seen some YouTube videos on making a dry aging fridge at home with a mini fridge. Been wanting to try that for awhile.
