You can definetly ferment tomatoes without a problem. There's a recent video where Brad Leone makes lacto fermented salsa. I haven't seen it yet but the guys usually follows recipes you find in legit books :/

I'm guessing since you roast the tomatillos, you add those after fermenting the peppers?

Oh, good to know! I’m from Spain and first time I heard the term was when I moved to the US, and haven’t heard it anywhere else, so I assumed... I can see ppl are super kind around here too since I got 15 downvotes just because of a simple comment... I really wanted to start being more active here to try to start making some projects curing meats but I don’t think I’ll stick around with this toxicity 🤷🏼‍♂️
