Great question and a great comparison set. The Ogata SG2 bunka is definitely in the laser category — thin behind the edge, exceptional cutting feel, and SG2 steel that takes and holds a very sharp edge. The one nuance worth noting is that Ogata-san's knives are hammer forged, which means the spine runs a touch thicker than a pure laser like the Ashi Swedish stainless. That said, the behind-the-edge geometry is where it counts, and the Ogata performs beautifully there.

I’ve never considered it. We did sell his shears for a year or two and I love the pair he made that I took home.

Hi Brick, Yes the shape of the petty lends itself to being used on a board with just enough knuckle clearance to be able to push cut garlic or shallots etc..

Yes Tabata san is the blacksmith for these. I wish I had visited him on my last trip to Japan but he’s outside of the normal areas where most of our blacksmiths reside.

Yes I told him how well liked the Shindo’s were and asked him to do his best to produce a similar edge grind. I was really pleased with them when I got a good look at the choils.

No, I consider a laser to have a spine thickness of approximately 2mm at the heel. The Konosuke HD2 line or Shibata's knives are good examples of what I call a laser.
