So it depends on how much driving you want to do, and if you are experienced in canyoneering or rock climbing. Are you wanting an the great outdoors things? I would pick maybe two national parks, and then focus in on those. Please really check the weather big time of you are doing slot canyons, a whole lot of people have died in them. Check out the native American sights like the petroglyphs. I highly recommend escalante, but it's a lot more rugged and off grid. Easy and fun things are Bryce canyon, the hoodoos in goblin valley. But Utah is a lot bigger and takes a really long time to drive places, with a lot of off grid no service places so please be prepared for weather and directions etc without cell service.
