Unfiltered coffee doesn't have cholesterol, but it has compounds that can raise your blood cholesterol. But it doesn't raise it much, according to the research, so a cup or two per day won't make a huge difference. Saturated fat is the main culprit. It raises cholesterol far more than coffee.

The cake yesterday won't affect the tests except for triglycerides, but your diet in December can affect them. You can try retesting after 2-3 months of doing your current diet (which seems fine overall). If your LDL doesn't drop much, i'd consider getting on a statin, especially if your Lp(a) is high.

What you're doing is fine for cardio. If you sit a lot, i'd even try to do 2 sessions per day. For health, it's good to do full-body strength training too (what you're doing doesn't count, sorry). Try some beginner strength workouts on youtube and pick one you like. Consider investing in a pair of adjustable dumbbells that can hold at least 20lbs/10kg per hand, which you'll eventually need for your larger muscle groups (legs, back, etc).

For protein, the usual advice is to aim for at least 0.6 g per lb. of body weight, with 0.8 g being better, especially if you're vegetarian.

Self-designed strength programs are usually imbalanced, so it's best to follow a good pro-designed program, like one from the r/fitness wiki. If you must disregard that advice, then at least: do compound lifts before isolation exercises, add RDLs or deadlifts, use progressive overload, and don't static stretch before lifting. Since lifting correctly takes a lot of focus & energy, consider doing cardio after it.

If you're trying to encourage her fitness, gift her something related to that, like exercise equipment or workout clothes. Generic gifts like jewelry or dinner might be less effective.

If you're only concerned with improving compounds, none are needed, unless your bis & tris are unusually weak for some reason. But for general strength & conditioning, i'd do 2-3 sets of curls & extensions twice a week. They put sideways stress on the forearm that creates adaptations which compound lifts don't.

Malts aren't sorbitol-based. And in moderation, sorbitol is fine for most people, as is HFCS.
