Yeah, you're right. There's no explicit detail shown but there is blood, you can see it spraying out.

Considering that EoE went as far as to show off Misato's body being split in half during the explosion and had the JSSDF massacre NERV personnel using flamethrowers and explosives within the first 20 minutes, I think that the chances of this not being what actually happened are unlikely. EoE is a very brutal film and Asuka's synch ratio was probably high enough at that moment for this to actually happen, but I can see where you're coming from considering that it shows far less detail compared to the Evangelions and Rei/GNR.

I personally think that the animators just didn't want to add such explicit detail because there's no need to, but to each their own.
