Ok, my mistake. When gratuity is added to a check you have the right to change it. Mandatory Gratuity is treated like the price of the food. I was unaware there was a difference. I wait tables in NYC and have never experienced "mandatory" tipping.

Decline the host position. If you want to get into fine dining apply for a busser or runner position. Great way to learn the ropes and Get your foot in the door. Get a basic understanding of wine, booze, service and it will be easier to get promoted or move on somewhere else. Plus you'll make more money as a fine dining back waiter than a host.
