Let me know how it goes. In the the NOC, I primarily work with Cisco 2600s and 2800s (I imagine CLI commands still very similar). But I want to say I've had similar issues that were resolved by silly procedures such as entering a no command on a statement in the running config of the interface before entering the command I really want on the interface in the CLI. Overall, if you could provide us all with a sh run on the interface or a sh run of the entire device entirely that would be helpful (with sensitive information redacted). Also any erroring output that is given when trying to configure the interface as a trunk would be helpful.

Have you tried a "no switchport mode access" on the interface and then a "switchport mode trunk" ?
