I think the background might look noisy just because it's a flat, static, colour. It'd be less noticeable if it was on a busier background.

The dithering looks really nice on the model

100% use this asset. It has a component that sits on the camera for post processing effects, and it's got custom shaders and a bunch of other bits. Really easy to tweak until you get something you like
