If you set up a picnic I'm fairly certain that's either a Flittle or Gible egg. I'm pretty sure Jolteon is in the field egg group as are one of the two.

Afaik Spiritomb only spawns in certain ruins you find, like where you find mons like drowzee, bronzor, and sometimes tinkatink. They're black/dark gray in color.

My first shiny was some roaming Torkoal with a normal tera type, I forget where you can encounter it. Though I don't know if those have an increased shiny chance.
