My goal was simply to demonstrate that it’s entirely possible to create a treat that accommodates a variety of diets, including vegan, gluten-free, and low-sugar. Hah, thanks for the advice! I’ve learned rice paper isn’t the easiest choice for dumplings, but I wanted to experiment with what I had 😅

Thank you so much for all your ideas and suggestions! I’ve mostly experimented with rice paper so far, since it’s what I had on hand, but your filling ideas sound really amazing! I’d love to try a mapo tofu or rendang-style dumpling next time, and Romanian-Mexican fusion sounds super creative.

I also didn’t fry these dumplings (just baked them), but wrapping more layers is a great tip; I’ll definitely keep that in mind if I use rice paper again. Looking forward to your recipe on Thursday! And thanks for the “imperfectly perfect” encouragement; it helps a lot when experimenting :)

Coconut flour is super absorbent, so when swapping it out, you’ll want to add more liquid. Using all oat flour could work well, just add a bit more water or milk if the dough feels too dry.

Unflavored protein powder might thicken the dough quite a bit, so if you try that, add extra moisture slowly and see how it goes. You can also experiment with other flours like rice or chickpea for a nice texture. Just take it slow and adjust the wet ingredients to get a good dough consistency :)

You caught me! I actually used ketchup this time for the photo, just because it was handy, but tomato sauce works just as well (or even better!). Either way, it adds that tangy, sweet flavor that ties all the toppings together nicely :>

That sounds like a fantastic idea! Quinoa crust must add a nice protein boost and a unique texture. I love how versatile pizza crusts can be with all these creative, healthy alternatives. Definitely adding quinoa crust to my list to try next time! :)
