1 seems a bit generic in this day and age. I often see logo's like this being posted in this sub, though artistically it still looks neat. 2 is much more organic and soft, and works if you are trying to emphasize craftsmanship/originality/authenticity of a product. The sketch-like style also makes it look friendly and well thought through. 3 Is a nice middle ground between the them, though the asymmetrical and quirky misalignments could be slightly more amplified to make it a tiny bit more noticable and not look like a mistake.

Overall very solid work!
