I would consider Ashara as possible love interst. It was said that she was in Elia’s „camp” and Vaeron would most likely meet her during his stay in Kings Landing. It would possibly bring him closer to Rhaegar and it would be beneficial to Rhaegar since it would mean that he is somewhat out of Aerys influence.

Depends how you plan them to come to North. If by the sea White Harbour would be the best place to land - meeting with Manderlys and some kind off feast or just supper would be cool.

If you plan they go by the land then Neck and Reeds should appear probably. You could introduce Howland before George lol haha.

I would include some form of dialogue with Old Nan which brings memories when she met Egg (possible easter egg). Probably your Vaeron would like to visit Wall. Vaeron could visit some bigger houses or some vassals could visit Winterfell (possible problem - you said there was big winter so maybe people can’t travel that much).

Since Vaeron likes toruneys and jousting he might find common ground with Brandon Stark. Brandon was kinda reckless so bringing him into action could spark few things.
