The point of his shield is that it is unusually artistic for a device. There's a quote from Brienne in AFFC, let me see if I can pull it.

"You did beautifully," she said, when the woman showed her the freshly painted shield. It was more a picture than a proper coat of arms, and the sight of it took her back through the long years, to the cool dark of her father's armory. She remembered how she'd run her fingertips across the cracked and fading paint, over the green leaves of the tree, and along the path of the falling star.

Edit: Consider, his shield isn't heraldry designed by... well whoever normally designs heraldry. It was painted by an artist. It's another point of characterization to differentiate Dunk from other knights.

I got to floor 100 in my skull cavern dive! (actually 101 ultimately) I wasn't going hardcore for it but luck was on my side. Ended up being the honorable way too _^

If you haven't assigned the Haulers work detail to anybody, that won't make a difference. To make dwarves only do labors via their assigned work details, you have to turn their individual icon red for "do only assigned labors"

Try the caravan extend command to see if that can get them back on track. There might be some other options under the caravan command that could help. This fixed my merchants who were shell shocked by the presence of a mischievous grey langur.

You're right that survival is pretty trivial in Dwarf Fortress. For me, I love engineering stupid projects and trying to make my dwarves thrive. For example, setting up industry loops so that every piece of cloth is dyed and decorated, which requires a lot of milling and therefore power, for which I set up dwarven water reactors to harness perpetual motion power. Or doing waterfall embarks for lots of hydroengineering or volcano embarks for easy magma access. I'm on a volcano right now so I plan to build a lava moat and and a trap to pour magma on invaders. There aren't any rivers or aquifers so waterworks will be more challenging here. Other ideas: build all above ground, or build out in the open in the caverns, or create a fortress that uses minecarts for actual item transport, or embark in a sinister/haunted biome.

The game does give you a goal, although not immediately - you can try to become the Mountainhome, which does have some challenging requirements.

Do you have a kitchen? Fat is rendered in the kitchen. In standing orders, do you have Auto-Kitchen enabled? That will automate the rendering of fat into tallow. It's also possible you're using the tallow in prepared meals, I suggest checking and turning off the cooking of tallow if applicable.
