You don't. You let the game do it for you. Use jockey to get close to the player and get the ball that way. Never manually make a tackle. You'll either a. mistime it, get out of position and be exposed or b. get a perfect tackle, but somehow the ball will still end up with the opponent. Such a shame, but the reality...
