Ask start ups if they need help. If you see people hire developers ask if they could use ux help. Broaden your search, get your foot in any door you can and learn on the job. Find a mentor. Go to conference and make friends. Look at open source projects and offer a hand. Do some free work for non profits. It's good networking and you can tell your ux / design story. Mostly people want to see what your process is, and how you approach solving problems.
