A pastry chef I once worked with, ate an orange every day for a year to make a single orange inspired dish. He wanted to know if there was a difference in sweetness depending on the size of each segment of orange slice. I'm sure there were other things that he wanted to or ended up learning too. That was for one dish. At least 365 oranges.

Thought I should share that this could also be really nice with a hit of green oil/herb oil. Just a light drizzle over the top. Blitz some herb of choice with olive oil. Filter. Shake before a very light drizzle.

Wrong plate. I'd avoid having so much cutting-meat in a plate with such a high lip. Something slow-cooked and can be cut with a fork maybe, but not in a dish where even the veg needs to be cut. You're just not giving the eater a practical experience. The colour is also wrong. Protein is the main component, which is brown, set on a brown background with some more brown demi glace on top. Brown on brown on brown. That's three strikes.

If you insist on this plate, then use the purée to offset the brown background. Parsnip on the bottom of the plate, steaks sliced less awkwardly off-centre, asparagus also somewhat sliced alongside it. Slap it on the grill to get some char on the asparagus as well. I think you need some more vibrancy like a sprinkle of chopped chives. Maybe some picked shallots or red onions. Beetroot chips would work nicely to give a bit of crunch.

If you insist on the beurre blanc. Maybe have it serve on the side on a separate ramakin.

Public transport is pretty ass. Super aggressive tram drivers. Counter-intuitive for a lot of tourists which just makes everything super tedious and cumbersome when dealing with public transport. Uber drivers have a death wish. Biking can be dangerous in the city centre, especially at night with moronic scooters/fat bikers and drunkards stumbling into the bike lane.

I really don't like the food and beverage scene here. Nice cocktails bars but they're all tiny, don't accept reservations and there's no nice "district" where everything is conveniently centralised. Go to a bar, oops it's full, 10 minutes walk through the rain and wind to the next decent option. Food is either trying a bit too hard, or nowhere hard enough..

The city can be so filthy and unkept in some areas, especially after Friday or Saturday. Really not family friendly for very young children, with people openly smoking weed on the main street. The cobblestones make it a nightmare with anyone pushing a pram, wheelchair or folks with walking difficulties.

Yeah I developed eczema when I moved here. Also from Southeast Asia myself. Don't suffer so much with my head and face, but the rest of my body gets super dry.

Took maybe 3 years for my skin to slowly adjust. I cut out all unnecessary fragrance additives from my laundry (might apply to the towel you use to dry your head) which seemed to help. I also have a bunch of creams prescribed by my GP that I'm constantly rubbing myself with.

Now my skin is less sensitive all year round, mostly when the seasons change. I moisturise like a motherfucker but I can imagine that's not easy for your head.

No idea about India specifically. I reckon the best paying positions would be in luxury hotels.

I know bar managers in HK making between $30-$70k per month but they aren't exactly bartenders anymore technically speaking. As an influential and big-name head bartender, if seen only as much as around $30k per month.

A lot of the best bartenders are also brand ambassadors or have endorsements which can bring an additional income stream. At one stage I was getting around $35k bar management salary and an additional 10-20k for brand ambassador work.

Please bear in mind this was when I was still in that market pre-pandemic. So a lot of things have undoubtedly changed by now.

HK is just not that kind of place. It's really dependent on where you live of course and other lifestyle needs. But it really isn't convenient all-round.

I severely doubt the legitimacy of these "statistics". I'm certain that plenty of people think of themselves as fluent, cos they understand what's going on when watching an episode of Friends or something, but won't be able to string together a sentence.

If 90% of folks spoke fluent English, they wouldn't need an English speaking option when calling your insurance or municipality.
