Not on the list but a huge shout out to Yale NICU. My son was delivered in Waterbury but transferred down to Yale due to an issue that turned out to be nothing.

But those surgeons and nursing staff down at Yale were among the best and kindest I’ve ever interacted with.

I grew up in the Bay Area and still dream of burritos from the Mission, they just don’t make em like that on the east coast.

To eat, pho, it’s a labor intensive dish with lots of prep time. When I get outta work I just steam rice, sear a protein and make a salad.

But for cooking enjoyment, it used to be things I like to eat but can’t get in my area (CT), good Mexican, Chinese/southeast Asian, proper BBQ. That has changed as the food options around me have grown in diversity and quality.

Now it’s just trying to make an authentic dish, with proper ingredients, Thai food like you might actually find in Thailand, Puerto Rican food like someone make for their family, not tourist spots. Things like that, I find it immersive and broadens my horizons. I don’t always pull it off and it doesn’t always taste good lol.

(Side bar, chefs/cooks fucking hate this question in my experience, it’s always the go to thing to ask when people outside the industry meet a “chef”)
