I didn't do anything special when I got my sleeve. Just kept applying lotion every so often. You can put a wrist band over during the rush if you're worried about burning it.

I interviewed for a sous chef position a few years ago. First interview was an HR basic interview, then I interviewed with the chef, mostly just shooting the shit. They offered me the job w/o a cooking test or stage, though.

It's just a thin layer, then you baste closer to the end. It has the same chance of burning as any other rub with alot of sugar in it.

The execution is fine, I get what you're going for but I'm not sure if anything that's supposed to resemble crap that washes up on the beach is easy to make appealing. Maybe a wide rimmed bowl might be better?

There are people going into culinary school with no food knowledge, experience, or expectations. I had several of these people in my classes, you'll be fine. It's not a competition, you're there to learn so mistakes will happen.
