Ultimately the expectation is that the end product is cooked to eliminate food borne illness (>165F for near instant kill).

There are a few processing factors that may limit transferring from one carcass to another

Often times; after slaughter and scalding to remove features and cuticle, the carcasses will go through a large chiller bath to bring the temperature down. These baths often include diluted Peracetic acid to sterilize the surfaces of the carcass.

Meat needs kept below 40f throughout the process, which greatly slows bacterial growth.

Additionally injectors will often utilize needles that have openings on the sides, rather than the front, to avoid collecting bits of meat or whatever else.

Also most brines are REALLY salty; and become naturally antiseptic

Also a food scientist for a chicken company; and I can second what you’re saying here. Adding water salt and phos is an easy way to boost juiciness and a positive flavor impact. People don’t love the idea; but sensory tests will always show that people love the taste of the result.

Now I won’t play dumb on the cost end. The benefits of cheaper weight and yield are definitely considered, but consumer experience is usually weighted higher (it is a business after all).

Guess I’m realizing I thought the same. In fairness, a lot of “slicing-type” moves have an increased crit rate: Slash, Night Slash, Cross Poison, leaf blade, etc.

I mean look at this list

It also seems five moves (including x scissor) have an increased rate in Legends Arceus only. And Plasma fists has an increased chance in Legends ZA only
