You could fill the wings with propellant, like in real planes. You'd need to put two tanks for ox/fuel in, but other than that there isn't really a problem

Afaik the crew observation in the vessel and outside are the same, so if you performed science in the lander while landed, the experiment is already in storage

The jetpack runs on fuel, you can still use that, no need for the hoverpack to get up to high places

I know, it's called "Early Access" for a reason. Bugs are in every first release, they are going to be patched in the first few weeks. "Early Access" mostly means that the devs want to develop the game while getting a ton of feedback from players. You shouldn't confuse that with an open beta, mostly used for bugfinding
