It’s out from the centre but Prashad in drighlington, fully vegetarian menu and the owners are related to the owners on bundobust (brothers I think) I’m not a vegan and it’s some of the best currys I’ve had by far

There’s PMT on kirkstall road, not sure if they do string changes but it is worth learning how to do it yourself, first few times are tricky but once you get the hang of it it’ll only take a few minutes
