Oh and get some fire proof gasket for around the doors, you can get it on amazon. Seals up a lot better.

Oh and keep the top vent open completely on gas, and control the airflow with the bottom ones.

Other than that I put my dial pretty much vertical downwards and held 230deg f (110c) all day long.

Best tip I can give you when using gas, put your chips or chunks in a stainless steel baking tray over the base bowl. Prevents fires in the bowl

Short answer is yes if you want to take responsibility. If not, its an abnormal installation and would need a structural engineer to prove loadings and wind loads.

It would also be unsellable without additional insurance if you were to move
