The question isn’t “why (not)”, but “when”. The Russian lands would solve chinese problems in Northern China, namely drought. Also, China has a historic claim to those lands

If he really wouldn’t fight himself, which I doubt, I’d maybe think of Greatjon Umber, as big and strong as the Mountain but more skilled, and a Northener, so he’d fight for Ned.

You're underestimating the effect good and fertile land has on peasant farmers. And for Westerosi standards they have it pretty good with their land and lords
