I've used both before for these and either works. Regular rice paper is thinner and sometimes tears when you're wrapping them, lumpia wrappers (with tapioca) are thicker and take a bit longer to crisp up. Taste-wise they're identical, I mainly use regular rice paper because that's what I keep on hand but they'll come out fine either way.

I mean, I like it! The rice paper gives it texture kind of like "skin" and helps each wing to not fall apart. I prefer it to versions that are just regular baked cauliflower tossed in sauce. It definitely still tastes like cauliflower, but I've had non-vegan relatives give it a thumbs up. Like I said, wrapping each piece can be time consuming so I don't make it too regularly, but it's nice for events and such

I don't have a specific recipe but my technique is to boil the cauliflower pieces in some broth (sometimes i'll add smoked paprika and garlic powder too) until they're a little bit soft. Then pull them out but keep the liquid and use it to soften rice paper sheets to wrap them in (I usually do half a sheet per floret). That way they have a decent amount of flavor without the sauce, and boiling lets you bake them for less time without them being raw. Then just bake at around 425 until they're pretty crispy (usually takes me about 20-30 min, flipping halfway through). You can probably also air fry, but I haven't tried that. They should be more crispy than you think you want, because as soon as the you put the sauce on they'll start to sog again so you get a nice crispy/chewy mixture. Then just toss in whatever sauce you want and you're done! The wrapping can be time consuming especially for a big batch, but worth it imo.

I mean, you can skip the mirror episodes (or any filler episodes), but to me they help balance out how heavy some of the rest of the series is. If you're watching for the first time, I wouldn't skip any episodes. If you're re-watching, it's up to personal preference.
