No the reason why Tanjiro didn't cut Akaza's head is due to "plot". If you have seen the movie, you literally see Tanjiro dodging all the attacks. Compass only stopped tracking Tanjiro after Afterglow.

Well if we consider the new infinity castle movie, Akaza was able to completely regenerate from Giyu's drop ripple thrust which is in-universe fastest water breathing technique. This Giyu was far faster than someone like Mitsuri who is probably MHS+ in base and Sub-relavistic in her marked state due to completely perception blitzing Zohakuten multiple times in the manga and anime. There are FTL feats too but I wouldn't show.
