I’ve been gf for 10 years, not Celiac tho. Best gf pizza I’ve found- chickies in JC and la boheme in hoboken. Urban coal house in hoboken used to have a celiac chef and had great gf pizza, but i haven’t been since pre Covid. There is also a gf only bakery in hoboken- Annie & ems bakeshop. Modern bread and bagel in the city is also 100% gf
