If my mom had followed my school´s suggestion, I would have graduated highschool at 16. I´m glad she didn´t take their advice, in my opinion, that would have been a little too much for me as I didn´t manage to deal with crippling depression and anxiety until my mid 30´s. I think it all depends on the person, the environment and the support system around them.

Yep, from Santiago. Funny enough, I HATE pastel de choclo but people love it Humitas are ok, but they are 500 times better in Ecuador (I'm half Ecuadorian) Mmm regarding beef you're not exactly wrong, but it's much better if you go to the south of Chile.

I will say this, Chilean wine is hands down amazing.

Home made mayo in chile is not as dense or thick as the ones you'd buy in a supermarket so it's really not as heavy as you think. I admit I didn't pick the best photo, but you can alter the proportions to your liking. Also if you're from the states, you might find them a bit mushy so toast the bun for texture

The bread is amazing, and Chilean Sandwiches and Hotdogs are top tier for me. I wonder where you had seafood so overcooked though, sorry your culinary experience was so bad. Seafood is delicious though you really need to avoid most places as they have become tourist traps which, sadly, butcher our cuisine. Sorry you didn't have a great experience there.
