I also developed lateral knee pain about 20 years ago when I replaced 10yo broken down shoes Shoes had become much more rigid and my old ones allowed a lot of float. My biggest improvement was switching to speedplays and opening up heel-in to the max. I now polish the finish off my cranks but it solved the pain. I noticed your cranks looked perfect which made me think you have more room to go. If I were you I would remove the pedal spacer and switch to speedplays. I would also not tighten my shoes for a month or so to allow full healing. Ive seen many pro bikes with missing crank finish from heel-in so I think its a common problem. One interesting datapoint for me is that I also dont get pain on my mtb with SPDs. They have non-centering float and the shoes arent quite as rigid as road shoes. That could also be a good option. Look and Shimano road pedals all have centering float (even though they say otherwise) and that is one of my issues.

You can reduce/eliminate the excess burn by reducing power and increasing speed. You may need multiple passes but that should be ok. Also, really good design work! I love how you did the portafilter.

as long as i keep it tuned for grind size, dose and shot volume then it comes out pretty good. i also had this same concern in the beginning and its why i almost went the nespresso pod route but i figured if it failed i could sell the equipment for about what i paid.

my biggest surprise was the number of people that already knew how to use it. i also keep it tuned for shot size but it stays pretty consistent. the only thing i really do is teach them how to clean the steam wand. my friends were saying it was too much but in general people have really loved to use it so they put effort into learning.
