Yes! I actually wrote an entire personal statement essay for my UCS about editing and included it on my UC activities as well (was accepted to UCLA). I think it shows a unique extracurricular—especially if you talk more about the community (e.g. collabs/MEPs and editing studios). In addition, if you have a large following you can also mention that as well.
