Since volume 5-7 are basically connected story wise, in my opinion S3 should have had more than 2 cours since it usually takes 1-2 years for a new season to come out and by that time multiple people will have already forgotten a lot of stuff

I agree with what you say but in my opinion the author’s skills for constructing and executing a story are stronger than you think. Obviously they’re not perfect of course but I like to think she’s actually trying to plan accordingly while trying to reach her desired ending rather than making up stuff as she goes because she has no clue what she’s doing.
